The concept of Morality is perhaps a subjective one, as the history of alcohol in Quebec may demonstrate. This IPA is brewed with a dare-we-say excessive quantity of Simcoe, Citra and Centennial hops. The dry finish is highly aromatic and slightly resinous, invoking tropical fruits atop dominant hop bitterness.

Moralité was crafted at our Montreal location in 2012 in collaboration with John Kimmich of The Alchemist brewery in Vermont, USA.

Nice frizzy mouthfeel with mild candy grapefruit in a protein haze pour. The aftertaste is an excellent grapefruit that doesn't overstay it's welcome. It makes the finish better than most. As a strong beer, it's nicely balanced between sweet malt and bitter hops. Like all great hop drinks, the balance makes it stand out.

On tap at the brewery in Montreal. This reminds me a lot of a lighter version of Heady Topper, which is not surprising given the connections to The Alchemist. The best beer I've had in Montreal.

Tried at their brewery this one pours sunset yellow with wonderful nose of grassy fruits and joy. First sip deepens with second with notes of fruit and decent hoppy bitter. A lesson in morality for sure.

Copenhagen 20/5 2024. 47,3 cl can from Kihoskh, Sønder Boulevard, Kbh. V. Two figures consisting entirely of a head and a set of legs observing ease other while standing on what looks like an inverted umbrella.

Pours opaque hazy, golden yellow with a big white head. Stable. Settles as thin, almost transparent layer of foam stretching to cover the surface of the beer. Clinging to the sides of the glass. Substantial lacing.

Aroma is medium intense with a sweet odor of overripe Stone fruit and a whiff of fermented decay. Mingling with a scent of citrus fruit. Sweet each and mango. Hints of passion fruit. Grapefruit and lemon.

Light carbonation. Slightly thick, oily, soft, lightly tingling texture.

Flavor is intense with a strong sweetness followed by a medium strong bitterness. Citric. Aftertaste is bitter. Lingering. Finish is quite dry.

The Good Lord hanging out with an Alchemist.

When choosing what type of IPA is more of a personal choice for any brewer, for the ones at Dieu du Ciel its perhaps a moral one. Chocked full of Simcoe, Citra and Centennial hops, the brewery steers clear of the haze for a bitter and tropical hop bomb.

Pale chrome and dullish amber in color, Moralite releases a creamy eggshell froth to carry a host of tropical, citrus, sprucy and herbal aromas onto the nose. As a sweeter coat of malt crosses the early palate, suggestions of caramel, toastiness and nuttiness apply a buffer of sweetness in anticipation of the hops to come.

And as the hop flavors join the grain sweetness, a bold taste of orange, grapefruit, pineapple and apricot create a cocktail of fruitiness that pull from the honey-like sweetness and carry the taste into a drying late palate with a more bitter backdrop. As the session closes, the resinous flavors of pine, grass clippings, hemp and tea ensures a snappy and refreshing finish.

Medium bodied and trending dry, Moralite finishes both bitter and dry with a crisp, drinkable and refreshing mouthfeel. A long aftertaste of piney bitterness and citrus peels keep the hop focus alive in a long and gripping bite.

Brasserie Dieu du Ciel! IPA - American

Ok, so.. A straight fire, bitter hop aggressive old school AIPA straight outta Quebec. Nice. It's bitter pine from Simcoe, Citrus and Centennial hops r super crisp, light golden haze and rather Spicy in the finish. This one brings me back a decade or so.

Clear amber brew with plenty of foam in the Stella Artois goblet. Spritzy on the tongue with a substantial mouthfeel. Aromatic with peach and pine. Resiny and citrus flavored. Piney with a mderate bitter aftertaste. From the pint can.
