The last letter from Mary Stuart Queen of Scotland, written on February 8th, 1587, on the eve of her death sentence; it is written in french and addressed to her brother-in-law, King Henry III of France. She signed "Reyne descosse."
The beer was created on September 24th, 2000. It is composed of five cereals and two hops. The secret of good Scotch Ale is in its aging. A good comforting beer and one of your brewer favorite!

Tap (Hivernale): Poured a dark mahogany color ale with a medium size foamy head. Aroma of caramelized malt and toffee is wonderful with light lingering peat notes also discernable. Taste is a wonderful mix between some caramelized notes with some toffee and residual sugar notes with light but perceptible notes of peat malt. This is perfectly balance while not being too sweet and not too smoky. Body is full with good carbonation and no apparent alcohol.

Smokey and peaty. A half a pint was enough. A popular style in these parts! A good one for the style as it is smooth and has the attributes. Dark coloured body, no significant head. Middling mouthfeel. Decent drinkability. A must try, but on the heavier higher alcohol side.

Appearance: A dark crimson shade that was hard for me to focus in on, the lights were darker than usual...Anyway, it wasn't quite opaque but almost, with a frothy head that held it's own nicely.
Smell: Toasted walnuts, hops were fruity and the alcohol finish was light, with a tiny bit of that corky, aged aroma that was subdued enough to be quite pleasing.
Taste: My first sip surprised me with it's silken, lacy smoothness, the carbonation almost absent. A very mellow sherry/Madeirized flavor that mingles well with the solid chunk of caramel malt and pretty much cancels out any lingering alcoholic vapors or unpleasant tannins. Bitterness is almost inexistent, the finish is delightfully sweet yet not cloying at all, it was a pleasure to drink from start to finish. This Beer really hit all the right buttons for me. Nicolas, the brewmaster, procrastinated for months before releasing it (9 to be exact), but it was sure worth it, kudos to him.
