Chef Collaboration Series: Jared Rouben (Goose Island's head brewer), Big Star chef de cuisine Justin Large, Ben Fasman and Laurent Lebec (both managers at Big Star)

"American pale ale that used American yeast and both Chinook and Simcoe hops. Chinook will give it a slightly piney aroma, while Simcoe hops also have some pine to them but tend to give things a slightly grapefruit-y flavor. We used a bit of rye to give it some spice, and two different types of caramel malts, to give it some body as well as hopefully making it a light-whiskey amber-ish hue. Finally, we dry-hopped it the other day, so hopefully it'll go down like a good, clean session ale, and not a hoppy American-style IPA."

Brewed exclusively for Big Star's one year anniversary, this beer was described to me as a "hoppy session ale," which is a pretty accurate description.

A: Amber gold with a smallish off white head. Very clear.

S: Quite aromatic scent of citrusy hops, predominantly grapefruit, with some pine in the mix as well.

T: Light pale malt base allows for a blend of citrus and pine hops to show through. There is a bit of rye pepper spice on the finish. Supposedly this beer was aged in whisky barrels, but I am not picking up any of it.

M: On the lighter side, with active carbonation, though it should be noted this beer was specifically brewed to accompany Mexican food, so the light body and high carbonation are a good match in that sense.

D: Overall, a good beer. Light malt profile with heavy hops, makes for a very easy drinking session beer.
