From notes. Tasted on draft at Sheffield’s. Pours oily black with a thin brown lace head. Aromas are vanilla, bourbon, caramel, milk chocolate, molasses, and a hint of smoke. It also leaves a spicy tingle on the nostrils. The beer starts off sweet with bourbon, caramel, molasses, vanilla, and moves to some bitterness. The chiles really kick in on the back of the palate with a delayed and slow, spicy burn. The body is huge with light carbonation and a super long, slightly bitter finish that left me with a spicy burning sensation for almost thirty minutes afterward.

I tried this several times yesterday at Goose Island's Stout Fest. I was really, really looking forward to trying this and it didn't disappoint. Like all Bourbon County beers it arrived a thick, oily midnight black with no head at all. The darkness allowed zero light to pass through. It coated the glass when sloshed around. It smelled of sweet bourbon, oak, vanilla, chocolate, coffee, and had just a slight hot chili spiciness to it. Just sniffing on this one made me smile. The flavor was very, very appealing. Unlike the Cherry BCBS that I tried right next to this, the Ancho Chile wasn't cloyingly sweet. It featured a nice mix of chocolate, roasted malts, bourbon and subtly spicy chile. It was just so interesting. Another thing I appreciated was that the pepper didn't burn at all or linger too long. It was just right. It was exceptionally smooth and coated the palate and had an excellent permeating flavor. This is probably my second favorite of the Bourbon County beers, behind only the Coffee. What a beer, I really, really hope they bottle this. I'd be interested in seeing how this beer would age over time.

Had this a couple times, review from first time at Sheffields at GI tap takeover.

A - It looks like any of the other BCS series, which is generally impressive. Black, oily looking beer with a fine brown bubble head that didn't leave much on the sides.

S - It smells like BCS with sweet bourbon, lots of chocolate, little bit of coffee, slight molasses, toffee, roasted malts. Oh wait, then it smells like BCS that someone has taken a pizza hut pepper shaker to and dumped tons of red pepper flakes in. I like me a good chili stout, this does not smell like a good chili stout.

T - Tastes like it smells. BCS with red pepper flakes. Not good at all.

M - Thick, viscous, smooth, moderate carbonation.

O - Granted, it had improved the second and third time I had it, but the first time it was pretty much gross. Was hoping for something like Hunahpu, but found you can really just make this at home on your own with a bottle of BCS and some red pepper.

Served at FoBAB 2010. Similar to the regular version but with an extra kick of hotness. Poured a pitch dark thick oil color with a dark brown rim. Smell like vanilla, chocolate, and spices like poblano. Rich, thick, creamy mouthfeel. Finishes long. Overall great but not my fav of the BCS.

Served with no head, black in color.

Aroma is slightly sweet with bourbon, vanilla, wood, molasses and a little chili spice.

Upfront flavor is bourbon, roastyness, some sweetness, and a slight chili spice and heat. The chili heat really picks up at the finish to mix with bitter chocolate and bourbon.

Full bodied, smooth and creamy. Little carbonation. Difficult to distinguish alcohol heat from the chili presence. The spicyness becomes more apparent as I kept drinking.

This Bourbon County Stout variation was really interesting--the chilies added a nice heat element but didn't impart a flavor per se. The bourbon was nicely subdued. Overall for me this was really similar to a regular Bourbon County Stout with a little kick to it. Probably my least favorite variation so far.
