Served in a willibecher at the Clybourn brewpub.
The newest Chef Collaboration beer, this one with Bill Kim from bellyQ. It pours a clear pale gold topped by a finger of stark white foam. The nose comprises lightly-tart lemon zest, sour wheat, coriander, cardamom, and light tangerine zest. The taste brings in more of the same, with less of a spice character and the addition of an odd bit of citrus (the menu mentions yuzu, which may actually be a possibility here, though I haven't bitten into a yuzu in my days yet). The body is a hefty light, with a moderate carbonation and a crisp, dry finish. Overall, an interesting take on the wit, what with the unique citrus component. Not bad.
