Brewed in collaboration with Blackberry Farm Brewery.
After spending a weekend with our friends at Blackberry Farm Brewery foraging in the Smoky Mountains, we brought back several yeast specimens and isolated a few strains to begin the fermentation process. We collaborated with the Blackberry Farm brewers on a recipe to echo and enhance the unique characteristics of these yeast strains. Found is a delicate and tart wild ale that’s golden in appearance and brimming with lemon, clove & apple notes which are complemented by a dry and refreshing finish.

MALT: Sugar Creek Malt, Pilsner, Red Wheat
HOPS: Tettnang

500 ml bottle, bottled March 19, Batch I-19 printed on label. Label also says 7.1%. Served in a Teku, the beer pours a mostly clear light gold color with about an inch white head that stuck around for a while. There's a small amount of lacing. I like the aroma, the brew smells like grainy malt, earthiness, apples, lemon peel and pears. I think for the most part the taste is similar to the aroma, but there's also the addition of some clove and hay/grassy flavors. To me the apple stands out but doesn't overpower the other flavors. Mouthfeel/body is medium, it's a bit slick with a good amount of soft carbonation. Easy enough to drink. I thought this was a good overall wild ale, glad I picked this one up! Definitely worth a try. $11.49 a bottle.
