Notes: Beyond Resin is a detour from the steady stream of juicy New England style IPAs that have been dominating the Side Trail lineup. Our original hazy IPA, Juiced In Time, has become more readily available. So we’ve gained some flexibility to venture into other variations of the IPA genre.

Beyond Resin began with the template of a West Coast IPA: bright, crisp, and dry with a hop character focused on classic American hops. These hops have a pronounced pine character like Chinook, Simcoe, and Columbus. In a deviation from the West Coast style, we decided to use what we learned brewing New England Style IPAs. By eliminating the vast majority of the bitterness from the hot side of the brewing process. We’re coming to realize that many beer drinkers who believe they don’t like hoppy beers really just don’t like the bitterness. Whereas the fruity, piney, citrusy characteristics of American hops are almost universally enjoyed.

What makes Beyond Resin most unique is a special ingredient added at the very end of the process: terpenes derived from El Dorado and Cascade hops. Terpenes are aromatic organic compounds produced to some degree by all plants. Plants evolved to excrete terpenes in order to ward off herbivores as well as attract helpful predators and pollinators. Cocktails of terpenes derived from specific plants through steam distillation or pressing are sold as essential oils. They have extremely powerful aromas ranging from pine and citrus to floral, earthy, dank, or musty. Hops have particularly high levels of terpenes, and many of these are shared with a famous sticky green cousin of hops that you’re probably very familiar with.

When we add hops during the “hot side” of the brewing process while the wort is being boiled or soon thereafter, many of these volatile compounds are evaporated. Dry hops added during or after fermentation provide a fresher, more complete aroma profile. But much of these precious aromatic chemicals remain in the plant material or bind with yeast or proteins that are later removed.

We waited until after the filtration process to add the full spectrum of terpenes distilled from hops. This obtains a uniquely fresh aroma in a uniquely efficient way. The end result is a refreshing and delightfully drinkable IPA with a classic piney West Coast hop profile augmented with a full spectrum of resinous terpenes.

Pours a clear deep amber color, w/ a 2” dusty tan foam cap, micro bubbles, semi active, great retention, 2+ mins. mild spotty lacing. Aromas of citrus, ‘terpenes’ from El Dorado & Cascade hops, semi earthy, dank and floral. Taste is semi sweet, citrus, biscuit malts, earthy hops, hints of grapefruit pith, piney; mouthfeel is crisp, thin to medium body, average carbonation, smooth semi dry finish, w/ low bitterness and lingering citrus peel and pale malts. Overall flavor is well balanced; nice “West Coast” style IPA without the bitterness. Very refreshing and no noticeable ABV at 7%, worth drinking at least 2.

16 ounce can into tulip glass, best before 9/2019. Pours slightly hazy/cloudy medium golden/amber color with a 1-2 finger dense and rocky off white head with fantastic retention, that reduces to a small cap that lasts. Thick soapy lacing clings on the glass, with a fair amount of streaming carbonation. Fantastic appearance. Aromas of big tangerine, red grapefruit, lemon, lime, peach, pear, pineapple, apricot, passion fruit, papaya, mango, honeydew, watermelon, red apple, berries, citrus peel/zest, wood, light peppercorn/pine, cracker, white bread dough, light honey, and herbal/floral/grassy earthiness. Damn nice aromas with great balance and complexity of citrus/fruity/tropical/fairly earthy hops and moderate pale malt notes; with big strength. Taste of huge tangerine, red grapefruit, lemon, lime, peach, pear, pineapple, apricot, passion fruit, papaya, mango, honeydew, watermelon, red apple, berries, citrus peel/zest, wood, light peppercorn/pine, cracker, white bread dough, light honey, and herbal/floral/grassy earthiness. Light-moderate pine, citrus peel/rind, herbal, floral, woody, grassy, peppery bitterness on the finish. Lingering notes of tangerine, red grapefruit, lemon, lime, peach, pear, pineapple, apricot, passion fruit, papaya, mango, honeydew, watermelon, red apple, berries, citrus peel/zest, wood, light peppercorn/pine, cracker, white bread dough, light honey, and herbal/floral/grassy earthiness on the finish for a good bit. Incredible complexity, robustness, and balance of citrus/fruity/tropical/fairly earthy hops and moderate pale malt flavors; with a fantastic malt/bitterness balance, and no lingering hop astringency. Fairly crisp/clean finishing. Light-moderate increasing dryness from lingering bitterness and carbonation. Medium-plus carbonation and light-medium body; with a very smooth, moderately bready/grainy/sticky, and lightly resinous/rindy mouthfeel that is fantastic. Zero warming alcohol for 7%. Overall this is an incredible IPA. All around fantastic complexity, robustness, and balance of citrus/fruity/tropical/fairly earthy hops and moderate pale malt flavors; very smooth and fairly crisp/clean/refreshing to drink with the mellowly bitter/drying finish; awesomely soft feel, and not aggressive. Amazing Chinook, Simcoe, Columbus, Cascade, El Dorado profile. Extremely juicy, vibrant, and fairly dank/earthy hops; with a great balancing clean pale malt backbone. Minimal residual sweetness with crisp dryness. A highly enjoyable offering, and spot on west coast style example; without being overly bitter/resinous.
