After meeting Head Brewer Tim Gormley of Burial Beer Co. in Asheville, NC, we knew right away we had common interests. Using our shared love for artisanship and traditional methods in sour brewing, we brewed Uncoil, a complex and funky barrel-aged sour ale.

We fermented local maltsfrom Sugar Creek Malt Co. with Brettanomyces in our oak foudres before aging for six months in our house barrels. After blending with our lambic-style sour ale, Basis, we added German hops for a subtle hop presence. Golden in appearance, notes of apple and pear are complemented by a tart, dry finish.

Poured from a bottle into a tulip glass. Cloudy golden yellow color with nice white head and good curtain lacing. Smell and taste of tart apples mellowed with an earthy bready flavor. Lemon and pepper spice. Great with pizza!

Intensely sour and draped in tradition, the brewing minds of both Upland and Burial take inspiration from the Senne Valley, in creating a collaborative sour ale of the Lambic-styled variety.

Cloudy gold and billowing with a loose and airy froth, Uncoil draws in the senses with a sharply sour scent that's decorated with citrus, orchard fruit, vinous fruit and a strong sense of sea brine. Weathered woods continue the aromatic complexities while a supple sweetness leads the taste with the lightness of sourdough and wafer.

The fruit flavors soon steal the show as the ale washes the middle palate with sourness. A strong taste of crabapple, white grape, under ripened orange, lemon, white grapefruit, gooseberry and lime are framed by the brisk acidity that plays out like a piquant white wine. A fine bitterness follows with notions of hay and peppery herbs while the fermentation character is playfully musty with burlap, saddle leather and attic-like conditions in a retro-olfactory action late on the palate.

Light and dry on the palate, the beer carries an utmost refreshment with a return of sourdough in finish. Crisp and highly drinkable, the fully fermented taste reveals very few inconsistencies as a quick and earthen aftertaste follows closely afterwards.
