Pours pale copper with a very small head.
Aroma of sweet caramel and melanoidin bready notes along with sultanas.
Sweet flavours: caramel, toffee, apple brandy. Incredibly sweet. Definitely a sipper.

Got this one at De Bierkoning in Amsterda
From a bottle into a snifter

APPEARANCE: Pours a one finger, medium looking, bubbly, slightly crackly, off-white head with decent retention. Head recedes to a thin wisp and ring. Dark, transparent maroon red with no carbonation evident. Ring remains but no real lacing.
SMELL: Cognac, red fruit, berries and nuts, toffee and some nice woody aromas. Quite bold with plenty of sweet fruits and wood aged complexity.
TASTE: Cognac, wood and toffee sweetness up front. Flavorful beginning, with sweet berries and caramel notes as well. Some alcohol and oak at the swallow, leading into a bold and lingering finish of cognac, oak, some sweet toffee and caramel, red fruits and a hint of hop bitterness. Some nuts linger alongside the alcoholic, wood and malty orchestra. Though the 15% is there, it never gets in the way. Really nice stuff.
PALATE: Medium, fuller body with lower levels of carbonation. Creamy and slick on the palate, goes down silky with a decent burn and finishes quite sticky. Some solid heat lingers, though you might expect more for its strength.
OVERALL: This is great, and it might finally convince me to declare Emelisse as the best brewery at barrel aging in the Low Countries. This is really well balanced, even with the 15% ABV, with lots of nice wood and cognac flavors and a solid base barelywine underneath. In fact, I’d really be interesting in trying the base beer on its own. Another solid, solid offering in the barrel aged stout and barleywine lineup that these guys have been churning out over the last couple of years. They never cease to impress, actually. Get some if you can. Highly, highly recommended.

Got a few of these bottles from a good beerfriend. Very well made beer with the alcohol really well hidden. I did not notice the cognac very well but boy what a good beer! Not much carbonation and a nice BA smoothness.
