Big thanks to Deuane for looking out for me on a recent trip and snagging a growler of this for me knowing ive never had it. This is an organic berliner brewed in collaboration with Zero Gravity.
Growler into a weizen glass because this is a super carbonated bugger. A rich 4 fingers of white sitd atop and slowly recedes puttin spots of lace on the glass. The brew appears a clouded pale yellow.
The nose of this brew is chalk full of cereal grainy sweetness mixed with yogurt and lemony lacto. A very nice display of what you would expect for the style. As it warms up, that lemony lacto really comes out with more of a natural lemony scent mixed with a bit of other fruity quality that isnt easily distinguishable.
The taste is super tart, much more than I was expecting. It hits thr palate with a surge of lemon and greek yogurt. Seemingly every sip dries out your mouth urging you to take another sip. It displays a lemony sweet tart aspect that make me salivate. There is some grain inclusion that comes forward with a bit of cereal grainy sweetness but it is also mildly funky beyond the yogurt touch, it is like cheese and something a bit earthy. The flavor profile really suggests a familiar process: sour mashing.
This is a light bodied brew with an effervescent level of prickly carbonation. It is easy drinking and a nice example of the style. This is a brew that would really appear to sour fans. At times the sharp acidty almos takes away from it's drinkability.
