this is excellent, one of the best hoppy beers i had in utah this weekend, a pale ale done with champagne yeast and liberally dry hopped, super well refined and very modern, i was majorly impressed. its nice and clear, rich golden toned, radiant and bubbly with a tall white head that lasts. the nose here is vinous from the champagne yeast, white grapes, stone fruit, elderflower, lots of nuance and some herbal character from the hops meshing in seamlessly. fresh pineapple and lime notes from the hops, really bright and crisp too. the flavor is great, cool to have this as a pale instead of an ipa, not a lot of grain, its light that way, and its mild on any hop bitterness, so the yeast and the dry hop profile are what stand out, they rule together, and this just screams spring to me. some grassiness in here, obvious freshness, a definite champagne character, bone dry and impressively fizzy, both of which define the style and are highly appreciated here. this drinks is big gulps, is super clean, and really is quite interesting. the hops are well selected, the lightness and effervescence rule, and i should have stuck with this and not switched to others on their menu, this is one of the best roosters beers i have ever had. super refreshing and unique, they should can this!
