Poured from a 12-oz bottle cellared nearly 10 years into a thistle glass. I would have reviewed it long ago, but — shame on me — I wasn’t reviewing beers back then!
Look: Dark apple cider, slightly cloudy, bubbles rising, with a thin off-white foam cap that lingered just a short time and left a tiny bit of lacing.
Nose: Nice — medium roasted malt, honey, spices, and pecans.
Taste: Oh my! Deep malt flavor, bourbon, honey, spices, and pecan. This is wonderful! A slight bitterness in the finish, just enough to balance the sweetness of the honey and malt.
Mouthfeel: Medium, perfect carbonation.
Overall: Oh, yeah! A great ale by itself, and an incomparable pairing for any dessert that's non-chocolaty. Tonight, it's ideal with Mrs. mpruden’s home-baked apple pie. And it hasn't lost much in the 10 years spent in our cellar — from memory, only the head has reduced from when I first enjoyed it back then. This has long been one of my favorite beers.

12 FL OZ bottle
Served in a snifter
This beer pours an orangish shade of brown. It is topped with an inch of tan head that leaves a little lacing.
As it warms vanilla and caramel notes open along with a peat smell and hints of alcohol.
The taste begins with bourbon notes that include vanilla and caramel. The caramel carries into the finish along with earthy, nutty flavors.
Full bodied and viscous mouthfeel
This is another high quality collaboration from Quaff Bros. I wouldn't quite call it an elite beer, but I wouldn't hesitate to drink another. Very good.

Enjoyed from the 12 oz bottle in a snifter. This FINE wee heavy pours
a clear deep amber with a nice head of dissipating foam that settles to
a thick ring, thin light pool, and nice light lacing. Nose of roasted nuts,
subtle booze, vanilla, bourbon, and dark sweet malts with floral honey.
Flavors surpass the nose with aplomb. Dark breaded malts awash in
bourbon and nutty mild roasted pecans laced with vanilla and heavy honey notes
with a light oak note on the rear. Excellent mouth feel; smooth, medium feel,
and a sweet bourbon laced finish that in nicely warming and welcome for the cold
months ahead.
Overall a fantastic brew that deserves more recognition and most likely
a higher rating.
The gypsy brewers do it again!
Cheers Quaff Bros!
