Served on tap in a snifter
Appearance – The beer is served a very lightly hazed brick red color with a one finger head of white foam. The head has a good level of retention, slowly fading to leave some spider-web lace on the sides of the glass.
Smell – The aroma of the brew is strongest of a tart cherry and apple smell mixed with some apple cider vinegar and a bit of yeast. Other aromas of hay and grass are there as well giving it a rather sour and funky smell.
Taste – The taste begins with a rather tart cherry and sour green apple taste that has a decent wheaty and bready base flavor. Upfront there is a good showing of a grass and hay taste as well as a strong presence of some yeast and spice. As the taste advances forward to the end, some the tartness seems to get more potent, and with some other flavors of apple cider vinegar and more spice arriving, one is left with a sour and tart funky taste to linger on the tongue.
Mouthfeel – The body of the brew is rather light with a carbonation level that is rather high. For the tart and funky tastes of the brew the feel is great and helps keep it easy drinking and flavorful.
Overall – A rather nice Biere de Garde overall. Its got a good funk/tart fruit blend that makes it flavorful and interesting on the tongue.
