12 ounce bottle into chalice, bottled on 10/30/2015. Pours lightly hazy/cloudy bright golden yellow color with a 1 finger dense white head with good retention, that reduces to a thin cap that lingers. Light spotty soapy lacing clings around the glass, with a moderate amount of streaming carbonation. Aromas of big apricot, pear, apple, white grape, coriander, pepper, clove, light banana/bubblegum, cracker, biscuit, light honey, herbal, floral, and yeast earthiness. Very nice aromas with good balance and complexity of fruity/spicy yeast and moderate bready malt notes; with great strength. Taste of big apricot, pear, apple, white grape, coriander, pepper, clove, light banana/bubblegum, cracker, biscuit, light honey, herbal, floral, and yeast earthiness. Light-moderate herbal/yeast spiciness on the finish; with lingering notes of apricot, pear, apple, grape, coriander, pepper, clove, light banana/bubblegum, cracker, biscuit, and herbal/yeast earthiness on the finish for a good bit. Damn nice complexity, robustness, and balance of fruity/spicy yeast and moderate bready malt flavors; with a great malt/yeast spiciness balance and zero cloying flavors after the finish. Light-moderate dryness from yeast spiciness as well. Medium carbonation and body; with a very smooth, moderately grainy/bready, and lightly sticky balanced mouthfeel that is nice. Alcohol is very well hidden with only a light warmth lingering after the finish. Overall this is a damn nice tripel style! All around great complexity, robustness, and balance of fruity/spicy yeast and moderate bready malt flavors; and very smooth and easy to drink for the ABV. A very enjoyable offering.

12oz bottle from the Tool Box variety pack poured into a tulip.

Quickly falling head of white that dissipates too soon with minimal lace on the glass. The beer is light bronze with very few bubbles.

The nose is peppery with alcohol, candy sugar, honey, mild hops and a suggestion of butterscotch and faint Belgian yeast.

Slight bitterness on the tongue upfront, pepper, amber honey, slight medicinal note and a lingering alcoholic hop oil finish.

The mouth is too thin for the style. I would call it water like midway through with an oily, warm finish.

I like most of MC's core lineup and have enjoyed a few of their limited releases over the years, but this one misses the mark. Not a terrible beer, but the overall experience would have been much better if there was more carbonation.
