Carefully poured, Celtika Blonde delivers an exceptionally clear (fingerprint clear) golden body beneath a creamy head of white. The yeast pour muddies both the appearance and the flavor, so be careful and save that very last bit for the very last bit. The head retention is good, and although it diminishes in height, it still maintains a thin but solid surface covering. Some very nice, dripping rings of lace and short walls just above the surface add greatly to its appearance.
The nose is musty, candyish, fruity, and a touch chalky.
The flavor is fairly basic, and yet surprisingly complex, expressing sweet and tart apples (Pink Lady), red berries, tangerine/orange, and a bit of yeasty must and chalk. Some candyish sweet notes appear here and there, and even some honey, as well as some soft maltiness. The bitterness is limited, but it still finishes dry with a gently lingering note of fruit (mainly apple, some light orange) and a quick, delicate flicker of tantilizing candy sweetness.
Overall, it's a beautiful, delicate, spritely, complex, refreshing and enticing ale that's oddly not really anything at all and everything at the same time. Remarkably well balanced and drinkable!!!
