Say hello to a new series of beers we’ve been working on: Florida Stout. This is our first true foray into the adjunct/pastry stouts popularized by many of our friends in the sunshine state, which the name pays homage to. This first batch was conditioned on over 200lbs of raw and toasted coconut.

Just a good ol fashioned coconut stout. Strong malt base doesn't get overwhelmed by the inclusion of various confections. Coconut comes through nicely, mixing well with the malt providing a little bit of a macaroon or Almond Joy quality. On the sweet side for sure, but roasted malt keeps up. Dense mouthfeel demands that you know that you are drinking a pastry stout. Coats the palate, allows the flavors to really show up. A dessert stout, a treat, and a great one at that.

Pours a inky jet black with a half finger of tan head that dissipates to a thin ring with a little lacing. Aroma of coconut, cocoa, and vanilla. Taste follows nose. Full-bodied and chewy.

Pours thick and add black as used motor oil, small brown fizzy head with lower retention little lacing long legs, pitch black inky color
Nose brings loads of coconut, toasted coconut and fresh flesh, vanilla, little cocoa and baking spice, coconut milk and maybe lactose
Taste big heavy sweet stout, little roast and coffee but big vanilla and coconut again toasted and fresh coconut flesh, little coconut milk and lactose creamy, touch of alcohol, bit of roasty bitterness, dark chocolate covered coconut, little baking spice and cookie dough, sticky sweet finish, bit more alcohol
Mouth is full rich creamy bodied, smooth almost velvety, lighter but good carb, touch of alcohol warmth
Overall quite nice although the coconut gets a bit over bearing, but coconut needs to be strong or it disappears

Brew: Voodoo Brewery - Florida Stout
Intro: 500 mil. poured into a tulip glass. Shared with a friend.
Appearance: Pitch black, opaque, Minimum head maybe .5 inch. Moderate lacing as I drank
Smell: Inviting chocolate, coffee, and coconut.
Taste: Followed the smell with the addition of vanilla barreling. Very tasty indeed
Mouthfeel: Thick mouthfeel with a slight mouth coating, medium carbonation.
Drink: First sip came with an eye opening surprise. I knew I was in for a treat.
Conclusion: Did not expect this. One of the better drinks I can remember. Taste prompted you to gulp but slow down and enjoy. We did! Find it if you can. I’ll go back and try to score another one

Florida Stout from Voodoo Brewing. Purchased on 16 Aug 21 from Franklin Beer, Franklin, PA. $ 15.00 (Including tax) per single capped 500 mL bottle ($0.888/oz). On room temperature shelf at the store, stored at home at 42 degrees. Reviewed 22/8/21. Note that I use DD/MM/YY protocol.
Undated bottle. Served at 52.3 degrees (I couldn’t wait any longer!) in a hand washed and dried Jester King snifter. Final temperature 55.0 degrees.
Appearance – 3.5.
First pour – Black and thick, like pouring Old Engine Oil (SRM 40), opaque.
Body – Black (SRM 40), opaque. When rear-lite, same with minimal penetration at the extreme edges. Some sludge awaits in the bottom of the bottle.
Head – Microscopic (Maximum three mm, aggressive center pour), brown sugar, high density, fizzy, quickly diminishing to no crown and no cap. Second pour produces no head.
Lacing – None, as expected at 11.6% ABV.
Aroma – 4 – No malt, no hops, no yeast, no vanilla, no lactose, but definitely coconut.
Flavor – 4.5 – Begins slightly sweet with chocolate, coconut, a touch of coffee, and just the slightest hint of vanilla. No malt, no hops, no yeast. No ethanol (11.6 % ABV, as marked on container) taste or aroma. Moderate gastric warming. No dimethylsulfide or diacetyl. Ends cloyingly sweet.
Palate – 4 – Full, creamy, soft carbonation.
Final impression and summation: 3.75 (After deducting 0.25 point for undated personal container) Sorry Voodoo – after 15 years in the business you should be dating your containers. Overall, a tasty Impy stout, with both the coconut and the vanilla making an appearance before being smothered by lactose. Time for some insulin.

Imagine my pudgy when I saw a real, honest big Voodoo stout on local shelves. I hope this is the start of a trend. Tall 500 ML bottle.
The pour is dead black with virtually no life even on a hard pour. The nose is full enough of coconut & vanilla to qualify as a 2021 stout. Any one of them, clearly.
Florida Stout is distinctly Voodoo & distinctly pastry. Big, thick, cloudy, malty, sweet, boozy, & with a main meal of raw, wriggling coconut with a sidecar brimming with liquefied vanilla beans. Chocolate shoves as it warms, nearly rivaling the previously mentioned in intensity. Decadent & sweet. I could put away a lot of this. 16.9 ounces to start.
One of the best non-barrel aged stouts I’ve had in a dragon fly’s lifespan. Lovely stout layered lovingly with exquisitely balanced adds. Excellent beer that borders on the elite.

Pitch black pour with a brown ring. Huge coconut, big vanilla, minor semi-sweet chocolate and coffee in both smell and taste. Smell is sharper with the coffee, taste is creamier by accentuating the coconut and vanilla. Think the nose balances better, but make no mistake this is a dessert stout all the way. Feel has the contrasting creamy and sharp textures with some booze popping through the smooth maltwork. Decently heavy bodied, very rich

Pours pitch black of course. About 1/2 a finger rich mocha colored head.
Aroma is heavy coconut with some chocolate and vanilla.
Lots of vanilla flavor upfront complimented by coconut.
Pretty rich and well put together pastry stout.

Appearance: insanely thick and viscous with no head. It is pitch black, with a syrupy-like looking consistency.
Smell: heavy coconut and chocolate at the nose with hints of sweet vanilla.
Taste: a true pastry stout. Heavy coconut macaroons with notes of vanilla shining through as it warms up. Its very rich, sweet, and decadent. Flavors are almost super concentrated, like it has been boiled down 12 hours straight. There is just a slight bitterness at the finish.
Mouthfeel: full bodied and thick. Absolutely no warmth. Slick, coating the mouth.
Overall: this really hit is mark with the adjuncts. Again, like biting into a coconut macaroon and it does not disappoint.

This pours viscous glugs of tar black building a short but densely creamy mocha head that settles to a thin curled ring.
Way better and also thicker than I expected, it's a total Mounds bar with a glass of coffee on the side, which I assume just a carryover from the roasted, slightly acidic dark malt.
Flavors of freshly shredded coconut just absolutely drenched in dark chocolate syrup are met by some mildly bittering element that's lightly woody, which is where I seem to get that note of coffee from, leaving a kind of earthy, root-like aftertaste.
Despite the thick introduction, it settles down a little due to a finely soft carbonation, finishing semi-sticky, becoming a little warming over time.
Batch 3 - Coconut & Vanilla
