Looking at the date on this, I wonder if it was an excellent idea to keep it to this for five years. When I pried the cap off, there was a lovely hiss, which is a good sign. I am serving the beer in a tulip glass at 46 degrees. The pour created a frothy, creamy, one-fingered, light tan head with fair retention. The somewhat quick dissipation left no lacing on the glass. I am charting the beer at SRM 24; it is dark brown with rich mahogany hues and does let some light through. This style's appearance is average; I would have liked to see a longer-lasting head.
Nosing the glass, I smell brandy, plums, cherries, wood, and leather notes. Swirling the glass a few times, I detect caramel, toffee, malty sweetness, toasted malts, lightly roasted grains, earthy, a hint of herbal, and molasses. The aromas are fruit-forward and less malty than expected, considering Devastator is the base beer. So far, I have not detected any oxidation; this is good news.
The flavors start with the base beer; a bock has wonderful malty flavors of bread, toasted malts, and light roasted notes. The barrel aging adds complexity to the beer with wood and a light char note. I also tasted cherries, chocolate, plums, toffee, caramel, molasses, figs, floral, peppery, and earthy notes. There's also a hint of the Maillard reaction, a chemical reaction between amino acids and reducing sugars that gives browned foods their desirable flavor.
The mouthfeel is carbonic, warming, and finishing somewhat dry. The body is medium-plus and has medium-plus carbonation.
Having consumed the original Devastator and knowing this massive malty beverage with a sweet finish from the heavy malt bill, I find this one tamed down. The Brandy barrels add complexity to the beer that keeps the big malty sweetness in check, bringing forward the brandy flavors. The beer has lots of carbonation in it, which distracts from the flavors. The mild oxidation was expected from a five-year-old beer. The beer, while not exceptional, is of average quality, with an intriguing barrel aging.

750 ml bottle shared with Craig. Dark brown with violet hues, small bubbly head. Big brandy notes in the aroma. Brandy works well with the sweetness of the Doppelbock, notes of plum, fruity.

The beer pours a fairly dark brown color with very light lacing, albeit pretty decent head retention. On the nose, there's a lot going on, as I pick up brown sugar, prunes, light vanilla and chocolate, and a hint of brandy. The flavor profile replicates the nose in this moderately sweet beer, with the brown sugar and light molasses seeming to dominate. Mouthfeel is medium bodied to full, with a long, lightly bitter finish. Alcohol is well integrated into the flavor profile, and so drinkability is pretty decent. The sweetness is a bit much for a dopplebock, which is the only real detraction.

In the end, a pretty decent effort from Wasatch brewing. Probably wouldn't order it again, but was glad to have an opportunity to try it.

Pours a color just slightly darker than brandy and about 40% transparent, nice red hues, and a grey-khaki head of 2 fingers, receding to a thick ring.

Aroma is tannic and also wine-like, bringing hints of cabernet and honey, and of course brandy. Some leather and aged wood creeps up as well.

Flavor brings a heavy presence of white cherry and dark grape to the palate, followed by honey oak and some floral notes, slight grape sucker, molasses, slight vinegar, honey, finishing on zinfandel and brandy. The peated honey and brandy sting together and make it an interesting compilation of flavors, but in the end an oak-y grape sucker wins out.

Feel is stinging, burning, has a medium to light body, somewhat watery, is slightly slick and resinous, slightly oily, with some drying tannins on the finish.

Overall a very weird but do-able brandy aged beer, and it's like nothing you'll have ever had before. Very good, very interesting. Lots of notes.

Pours moderately effervescent. Nose is brandy, red wine, grape must, and plum. Taste follows with some booziness, caramel, bready malt and big vinial notes. Mouthfeel is thin to moderate. Overall very enjoyable and one of the best brews I’ve had from Wasatch.
