Spontaneously fermented Tasmanian Farmhouse Ale aged in oak barrels with plums. Brew date: 2015, Bottled: 2018.
Whole plums were spontaneously fermented in oak barrels on a turbid mash wort. After 3 years the result is an extraordinary complex beverage with the plums lending fruit character to the acidity, length & structure from fermentation & maturation. Bottle conditioning is deliberately low with the gentlest sparkle to enhance the aromatics.
