This is a very good hefeweizen to be produced outside of Germany. Poured dark yellow with a smaller head than I would have liked to see. Tart and acidic, and a great aroma that is earthy and musty. Strong and unique yeast in the nose too. Complex and drinkable. The long finish is slightly sweet. Very nice version by a Quebec brewery of a classic Bavarian style.

Undated bottle acquired in Quebec City in July. Poured into a tulip, swirled the last 1/4 bottle.
Almost a perfect looking Hefe. A little more towards brown, though still quite strawlike & cloudy with a perfect 1 cm white head that slowly fell and laced very nicely. The aromas of this Hefe had light banana but definitely fell more towards the clove and spice side of things though not too much, a nice balance. The body feels a little thin, and a bit more carbonation would definitely have made this beer pop on the tongue a bit more. The flavours were muted with banana hitting first and some sour and spice lingering on the tongue with a moment of bread coming across the palate.
If the beer felt thicker, I would have thought this a great example of the style. A nice beer that sadly shows how the little things can really affect the overall beer.

Bottle: Poured a slightly hazy golden color ale with a nice pure white foamy head with good retention and some lacing. Aroma of banana esters and wheat malt are easily noticeable but also some corn which kind of ruin the aroma. Taste is also dominated by weird corn-like aroma which I didn't appreciate - this is too bad since the core beer seems to be well done but this aspect just ruined this beer.

Using yeast derived from a Rochfort bottle from six ears ago, the brewer has combined 50% wheat and L'accomodante to make a hefe that is sourish but also of mouthfeel substance. Lacey beer.Some complexity if accompanied by food, but not that interested in trying again.
