Compared to our DIPA from 2018, we have started from scratch. We have moved east and are serving a fruity flavor bomb with 6 different American hop types.
At the same time, it is brewed as a raw beer, i.e. brewed without boiling.

Pours opaque, murky maroon with a small white head. Settles as a thin, almost transparent layer of foam stretching to cover the surface of the beer Crawling up the sides of the glass. No lacing to speak of.
Aroma is intense with a sweet, fermented odor of overripe Stone fruits mingling with a sharp citric scent, mustard and alcohol. Mango and peach. Grapefruit. Boozy.
Medium strong carbonation. Medium thick, oily, soft, a bit viscous, lightly tingling texture.
Flavor is intense with a strong sweetness followed by a medium strong bitterness. Aftertaste is better with a sweet boozy undertone. Lingers for a while. Finish is semi-dry.
Potent, boozy and a little sharp.
