The colour is pale orange-gold. The beer pours silently, building a compact very compact white uneven head that sinks very slowly leaving no lacing. Although the beer is clear, there are someĀ
stuff floating around in the liquid. It looks like small fibres or something?
The smell is sour-bitter, spicy (citric) with quite a lot of yeast.
The taste is sweet with some sourness and spicy/citric notes of bitter oranges, herbs and some earthy notes of yeast. The body is quite low. The aftertaste is fruity with notes of oranges, lime, plum and green apples. There is a pleasant bitterness in the finish.
The carbonation is average for the style, quite strong and fresh with very small bubbles.
This wit is a very personal interpretation of the style. I would like it to be more sour and spicy and less earthy and sweet. After a while, every gulp takes longer time, not a good sign.
