Description: Light golden color with a minimal white head. Aroma is pine, floral ("like if a pine tree had flowers") and kind of earthy, umami hints. The earthy and thyme taste comes through more clearly in the taste than the smell but is not overpowering, provides a nice dankness. Still get a fair amount of floral and citrus with a bitter, hoppy aftertaste.
Suggested food pairing: Chicken Marsala

Ideal time to drink this beer: You pop in to the store to fill your growler and ask the bartender about a chardonnay barrel aged saison on the menu. She gives you the not-so-great look and describes it as a "beer trying to be a wine that wants to be a beer". You taste it and realize she's exactly right. At this point you're hurrying because you have takeout Thai food sitting in your car and want to get home to watch football. Scanning the menu you see a Stone IPA and figure it's probably pretty decent, so you hand over your growler for the fill up.
Overall: 4 (This beer is good and I may or may not drink it again) This beer wasn't great but it wasn't bad either. Stone knows what to do when brewing an IPA and this is not a disappointment. The thyme flavor is a little different and adds a refreshing, dank, twist on standard IPAs.

On tap at the Stone Company Store in Pasadena, CA.
Pours a hazy golden-orange with a foamy off-white head that settles to a partial film on top of the beer. Small dots of lace form around the glass on the drink down. Smell is of citrus fruit, citrus zest, earth, and herb aromas. Taste is much the same with citrus zest, earth, and herb flavors on the finish. There is a mild amount of hop and herb bitterness on the palate with each sip. This beer has a lower level of carbonation with a slightly crisp and dry mouthfeel. Overall, this is an above average beer with interesting herb qualities, but they dominate in both the smell and taste.
