Homo Bourbon Sapien is a boubon barrel aged version of Sapien. Though the server was unsure, he believed cherries were part of the aging process of this limited edition brew. It was served on tap at he VIP room at Dark Horse on 8/11/2012.
Served in a tester glass, the tripel was a dark golden color with a slight white head. The aroma was a magnificent combination of the fruitiness of a tripel with the vanilla of barrel aging. The initial taste was a balanced flavor of sour cherries coupled with nuttiness. These more intense flavors mellow into a vanilla flavor. The taste is a homerun in the aftertaste where a big whiskey bomb explodes. It is the taste of whiskey without the burn of whiskey. If Darkhorse ever bottled this one, it might get bigger than bourbon barrel aged Plead the 5th.
