Bottle: Poured a lightly hazy beige color ale with a large enough off-white foamy head with good retention and some light lacing. Aroma of cedar is quite powerful with a grainy malt aftertaste. Taste is again very much dominated by loads of cedar notes with some weird unrefined grainy notes which are more or less interesting. Body is about average with good carbonation. I am not sure I am really enjoying this trend of aging beer with cedar and the malt base in this one if not really inetersting.

A- Poor head retention. Hard to see through this cloudy yellow. A bit of a golden highlighting to it. Thick head is a few shades lighter than bone-white.
S- Listerine! The brown kind. A bit of a sweet wheaty sweetness in the back. All in all, cedar (...listerine) is what stands out. I still think it smells pretty good. Girlfriend says it smells like Pine-Sol... she's kind of right. I'm rating this high because it definitely smells like cedar and that's got to be worth something.
T- Well this really is a cedar beer. Not much subtlety in here. That Brasseurs du Hameau yeast is there too but not as obtrusive as in some of their other beers. A nice discrete bitterness in the end. Noticed a little bit of wateriness at the bottom of the glass, probably due to lack of carbonation.
M- High very sharp carbonation. Dry finish. Medium body but boy is that carbonation aggressive.
D- Gets better as you drink and get used to the cedar. Only thing is, the more you drink, the more you notice that yeast taste. A pint or 2? Sure.
Well it tastes like cedar and it's well drinkable. I guess they did good. I recommend it only if you want to try something very different or are a fan of spruce beers, sodas, jellies, etc.
