everyone is making one of these now, but this is way better than most of them, they style i feel like i have been most critical of lately, but this one really is great. i think a lot of it comes down to proper use of these enzymes, and this is very professionally done, actually my favorite of the hoppy offerings i got to have in here. the texture makes this for me, its so clean on the ferment, so light and airy and active and fresh, effervescent and radiant, really i love that, the style depends on it, and in this case its super flattering to the hops selected, which have a southern hemisphere tropicality to me, but also a neat almost savory component, galaxy or something australian leading, and some fruity citrus there too. orchard fruit and white wine notes, clean minerals, and somehow a little more depth and complexity than most of these have, even though its so drinkable. refreshing somehow too, and its strength is surprising, this stays light the whole time for me. a really beautiful recipe and execution, one of the better brut types i have had in some time...
