Appearance: Black with a moderate sized foamy beige head that gradually faded. The head stayed thick for a while and slowly subsided to a ring. Very good looking stout.
Smell: Moderate Bourbon notes, moderate grapes/cognac notes, and mild brown sugar aromas.
Taste: Moderate Bourbon, moderate cognac, roast malts, mild caramel/brown sugar and drying tannic oak notes. The finish is dry likely the result of the cognac barrel aging at the end. The beer has a complex and tasty flavor profile.
Mouth-feel: Medium bodied with a moderate level of carbonation. Not the thickest Imperial Stout but not bad.
Overall: Another tasty Eclipse variant. The double barrel aging was interesting and doing the cognac barrel aging last resulted in a beer that's drier than most other Eclipse variants. It never ceases to amaze me what different bal-aging does to the taste profile of the same base beer.
