Belgian Style Imperial Stout. 11% ABV, 100+ BU. A year and a half ago, we laid some Imperial Chaos Stout to rest, entombed in an oaken sarcophagus within the friendly confines of our Cellar. It emerges with a robe of velvet draped over its shoulders. Vanilla, caramel, and molasses lead, with fig and blackberry following in the shadows.

2017 ventage. Very dark appearance with a slight tan head that desipates quickly and some carbination. Molasses and bourbon aroma. Taste is also bourbonand slight molasses with a little alcohol. A little aging and it should improve.

375ml bottle with gold wax top from Lifesource in Salem OR $7.99 Pours a pitch black with a small tan head..that dissipated fast. Boozy, creamy, vanilla and coffee nose..really complex . Also whisky fudge, creamy chocolate and wood. Smooth creamy fudge taste to begin..then the oakey woodiness of the bourbon..than some dark dried fruits..a bit of vanilla and some hazelnuts to finish. Nice smooth thick mouth feel..with a delicious bourbon booziness in the end. A very nice drink..good to get it on sale because of a ripped label.

Serving on tap in a small snifter.
Appearance is dark mahogany, with a nice tan head and good lacing.
The aroma is mostly bourbon, but fairly mild.
The taste is vanilla, dark chocolate, and dark fruits, with Belgian yeast, and of course the bourbon. I get no appreciable bitterness, although I tend not to be too sensitive to that. The brewery says there are 100+ IBUs, but I can't find them.
The mouthfeel is incredibly smooth, with light to medium body.
Overall, this is an excellent beer. It's very balanced, with all of those flavors I mentioned blended seamlessly together. Highly recommended, if you like beers with some subtlety. Of course any bourbon barrel beer can't be too subtle, but this one at least is understated.
