This delectable IPA combines the best of the Pacific Northwest and the southern hemisphere, thanks to the infusion of Thiolized yeast and New Zealand hops. The addition of Thiolized yeast enhances the biotransformation and hop oil utilization, unlocking a myriad of previously inaccessible aromas and flavors. Complementing this innovative yeast, New Zealand hops bring forth tropical, ripe, resinous, and dank characteristics, distinct from traditional US and European varieties.

Had at the Overlook brewpub. This is a decent IPA. It pours a nice golden color and minimal head and an aroma of malt and tropical fruit. The taste a slight sweetness and bitterness, nicely blended. 65 IBUs Rated 9-2-2023

Look: Light to medium yellow on the pour, which kicks off a frothy white head that settles to a lid, leaving good lacing behind
Aroma: Lemons, herbal tea, culinary sage, some cut grass, and light bready malt
Taste: Starts off with a light herbal note that quickly transitions to what I perceive as culinary sage – dusty, herbal, meaty, and plant tasting – and this begins to develop. A little lemon and grass blend in but are trumped by the sage throughout the middle and close
Mouthfeel: Full but light, medium-high carbonation, and medium strength dryness felt on the finish
Overall: This is an odd duck for me. I had a Fort George beer earlier this year that I perceived sage in (my first time ever experiencing that note) and I later found out that that beer utilized Cascade hops, so I can only assume this beer does too and whatever way it’s being used here, it’s very different. I like and cook with sage a lot so can appreciate its flavor but for me, I’d prefer this flavor with food, not in beer. One and done for me but the beer label is awesome and sold me quickly

Clear pale amber brew with abundant foam in the big Stout glass. Interesting aroma of lime peel, pine, and cucumber. Sudsy and lush in the mouth. Prickly carbonation with malty mouthfeel. Slight sweetness to start and a mineral finish. The hops are off the fruit spectrum and more resiny and dank. A little green apricot. Moderate bitter aftertaste with a Finally, a highly quaffable IPA with plenty of flavor and less attitude. From the 500 ml refillable bottle purchased at Elizabeth Station. Filled date is 2023 something.
