We aged the beer in used bourbon barrels for 8 months. Those barrels have also had Sam Adams Utopias and our Barley Wine aged in them, so they have a nice pedigree! ABV is about 10%

On-tap 9/27/2015 at Natty Greeneās Tavern, in North Attleboro, MA served in a tulip glass.
A: The beer is a deep dark brown color, with a thin off-white head that fades slowly and leaves a thin lace on the glass.
S: The aroma contains coffee, chocolate, licorice, rich roasted malts.
T: The taste starts out sweet with flavors of chocolate, coffee and licorice that are followed by a hearty roasted malt character. The hops presence is very mild as expected but brings a good balance. The after-taste is slightly sweet.
M: Crisp and smooth, medium-to-heavy body, medium carbonation, finish is slightly sticky.
O: Tasty, goes down easily, slightly filling, strong well-disguised kick, good representation of style, this is a solid big stout to sip on for a while.

Rock solid imperial stout. Good body and finishes nicely clinging only a bit to the tongue. Nice coffee taste that lingers in a welcome way.

Jan 2011 poured out into a tulip glass yesterday. Poured inky black and the carbonation still remained and created a one finger dark tan head. Smell is nice, a little boozy with a hint of barrel. Very rich aroma with dark fruits. When cooler, this beer has a big taste of rich, sweet fruit and a back end taste of coffee bean. Strong raisin/prune notes. When warmer it starts to feel more viscous and the molasses notes come out more while the coffee disappears. Still no hint of booze in the mouth but it leaves you with a very full feeling.
All in all this is not a super big roasty chocolate stout. This is more of a rich, complex english stout that definitely tasted fantastic with 4 and a half years on it. Certainly a treat and I'm glad I broke it open during a bottle share.

Broke open my 2nd of 3 today.
Black with inky quality, a loose rim of tan foam and central circle of etches. Smells fucking awesome. Honey, vanilla, alcohol, oak, graham, cocoa and a little nougat. Flavor is leather, cocoa, dark chocolate, some oak and tannins, a bit of booze. Full bodied and medium carb with a chewy finish and semi dry but watering ambience. Nice beer. Wish they'd keep making this.

Presentation: 22 oz. bomber bottle poured into a Kate the Great tulip glass. From the Jan. 2011 (and only to my knowledge) batch. Served chilled and allowed to warm over about half an hour.
Appearance: Dark brown to midnight black in color. Pours a pretty formidable, one and a half finger light brown head. Recedes into a nice lacing around the edge of the glass.
Aroma: Some light smoke, oak and chocolate notes are the most recognizable. A little cherry, the Utopias note from the barrel, and bourbon from barrels is there as well. Even a touch of vanilla.
Taste: The base stout provides some smoke and a light chocolate note. The age doesn't seem to have done much negatively here. There is some slight oxidation. Oak, cherry, and a light touch of bourbon and vanilla from the barrels. The alcohol is hidden pretty well.
Mouthfeel: Medium/full bodied and slightly creamy. Carbonation is pretty spot on.
Overall, a nice version of an imperial stout. The bourbon is not so prominent as the barrel character is more Utopias than bourbon forward. It is pretty well balanced. Definitely an interesting and unique beer.

Pours an opaque black with a foamy dark khaki head that fades to an oily film on top of the beer. Small dots of lace form around the glass on the drink down. Smell is of dark roasted malt, cocoa, coffee, cookie dough, and slight alcohol aromas. Taste is much the same with a slight alcohol kick. There is a medium amount of roasty bitterness on the palate with each sip. This beer has a lower level of carbonation with a slightly crisp and medium bodied mouthfeel. Overall, this is a good beer with some solid aromas and flavors.

Overall, this is a good beer with some solid aromas and flavors.

Black with little head. Bottled January 2011, sent about a year ago from Dr.Jay. Big coffee aroma, perhaps added. Medium mouthfeel, which is light for an IS. Very coffee taste, a minor in spice and chocolate. OK, bit not terribly drinkable. Big bitter, with a little sugary backing.
