Sophie is a blend of two Imperial Stouts; one brewed with coffee, lactose and aged in red wine barrels, and one brewed with pure malt and aged in brandy barrels, which gives the beer lots of power and mouthfeel.
Malt: Pale Ale, Pilsner, Carafa Special III, chocolate malt, Abbey, Munich, Cara Cafe, Cara Ruby, smoked wheat malt, roasted barley.
Hops: Bittering.
Brewed with: Coffee, Dextrose, Milk sugar (lactose).
Yeast: Ale.

Copenhagen 5/2 2026. 50 cl bottle from Spar, Støberigade, Kbh. SV. Black label with the proud ship Sophie of Sønderho drawn in a thin blue line.
Pours opaque dark brown with a small light beige head. A bit bubbly. Settles as a thin ri of foam running along the side of the glass. Moderate lacing.
Aroma is fairly intense with a sweet malty odor mingling with a potent scent of barrel and alcohol. Dark malts and lactose. Brown sugar. Toffee and caramel. Whiff of espresso coffee and dark alcohol.
Low carbonation. Thick, oily, soft, a little sticky, viscous and kind of flat texture.
Flavor is intense with a strong boozy sweetness followed by a moderately strong bitterness. Aftertaste is sweet with a boozy and searing undertone. Lingering. Finish is potent and sweet.
A fine boozy blend.
