This beer was brewed using a variety of malted barley and raw wheat. One variety of hop was added to the kettle during the boil. The wort was transferred to our sour cellar to cool in the coolship overnight to be fermented with wild yeasts and bacteria. The liquid was then aged in puncheons (wooden casks) for 12 months. This is the traditional Lambic method with minimal intervention that perfectly encapsulates the micro forna and flora of the Ellon countryside.

Copenhagen 26/4 2021. 37,5 cl bottle from Meny, Østerfælled Torv, Kbh. Ø. Yellow and white label with orange text with a very strange hyphenation.
Pours unclear - almost hazy - golden yellow with a small white head. Settles as a thin patch of foam unable to cover the surface of the beer. No lacing to speak of.
Aroma is intense with a light fruity sweetness soon overpowered by a strong sour scent of unripe berries. A bit of sweet pear. Sour gooseberries. Vinegar. Light funky touch of sour cheese.
Strong carbonation. Thin, oily, lively and tingling texture.
Flavor is medium intense with a light sweetness followed by a strong searing sourness. Aftertaste is sour. Lingers for a while. Finish is bone-dry.
Fine Sour Sequel. Not overly funky but bone dry and austere.
