This is accomplished by using very “young” (partially fermented) Steelgaarden Wit. A Wit bier uses similar raw materials as a lambic. This makes a suitable and convenient replacement for the lambic we removed from the wine barrels. The “funk” or good bacteria left in the wine barrel is the catalyst to start the souring process. The brewers further inoculate the new beer with a culture grown in the “Mother”. Like sourdough bread the mother is the source of the unique bacteria culture used to age our lambics.

I think we got lucky getting this one as we kicked the cask (at the Bethlehem location). It wasn't on the menu, but we asked the Waitress if they had anything on cask and low and behold, she came back saying we have a unblended Lambic on. SCORE!!!
Poured a medium and cloudy amber color with a very small sized off white head. Aromas of mustiness, funky, wet hay, earthy, and lightly fruity. Tastes of mustiness, brett, light citrus, and lightly bready. Light to medium sour and tart finish.
