This is accomplished by using very “young” (partially fermented) Steelgaarden Wit. A Wit bier uses similar raw materials as a lambic. This makes a suitable and convenient replacement for the lambic we removed from the wine barrels. The “funk” or good bacteria left in the wine barrel is the catalyst to start the souring process. The brewers further inoculate the new beer with a culture grown in the “Mother”.

On tap at Brew Works' Bourbon Beer & Bryson event...
Appears a hazed orange toned amber with a small head of cream colored foam that quickly fades away. Scattered bits of lacing are left around the glass.
Smell is of apples, vanilla, caramel, cherries, rhubarb, and light vinegar.
Taste is of the mentioned aromas with a gentle funk that keeps this beer in check. I could've had this all night long.

Had many pours of this at the Opening Tap in Philly on 6/4/10. This batch brewed with 300 lb of apples. Not back sweetened (as per the brewer). Review from notes.
Lovely amber color, very clear, with a cream colored head that left streaks of lace while it lasted. Holy cow, this is apple heaven. Wonderfully tart and funky with green apple aromas blasting in your face. Lactic and juicy, this is what a Pomme should taste like. Puckering yet balanced with sweetness from the malts. A rich and earthy funk in the background keeping everything in check. Moderately light body and well carbonated, this is a beer I can drink any time in large quantities :)

Wonderfully tart and funky with green apple aromas blasting in your face. Lactic and juicy, this is what a Pomme should taste like. Puckering yet balanced with sweetness from the malts. A rich and earthy funk in the background keeping everything in check. Moderately light body and well carbonated, this is a beer I can drink any time in large quantities :)
