This is accomplished by using very “young” (partially fermented) Steelgaarden Wit. A Wit bier uses similar raw materials as a lambic. This makes a suitable and convenient replacement for the lambic we removed from the wine barrels. The “funk” or good bacteria left in the wine barrel is the catalyst to start the souring process. The brewers further inoculate the new beer with a culture grown in the “Mother”.

05 vintage on tap at kraftwork 1st anni party. A blackberry, raspberry, cherry lambic.
A- comes to me with a small cap of white foam that settles very quickly and leaves only a few wisp on top. Hazy peach orange in color with a nice glow to it.
S- bright and sharp tartness with a big blend of fruits with the raspberries taking the lead. Oak is well funked and add a nice complexity. Lemons creep in and out.
T- big sour punch right out of the gate with lemon juice and tart cherries and raspberries. Good oaky funk and a touch of vinegar. Light sweetness that works just right with the rest of the flavor profile. Long tart finish.
M- a tick less then medium in body with a small bubbled yet bright carb that tingles just right. Great juicy pucker.
O- this is delicious and a nice treat to have. One of the best american "lambics" I've had and even beast some of the real ones.
