Xyauyù Barrel is the result of a “wicked idea” of Teo’s and years of research. It is a top-fermented beer which has gone through macro-oxidation and has been aged in oak rum barrels to give it scents of dates, caramel and a delicate wooden note. When poured, it has no head and no gas; it has a dark color with copper nuances. XYAUYÙ BARREL, is excellent with chocolate and drink slowly after a meal.

From a corked bottle with a 2017 vintage date. Sampled June 26, 2024.
The appearance is chocolate brown with no head to speak of.
A wide array of aromas include roasted chocolate, dark fruit, grape, amise, raisins, and spiced rum, which lends a boozy character.
The mouthfeel is medium but chewy. It reminds me of a thick candy bar. It's not as full as I anticipated.
The flavor is roasted dark malts with a noticeable sweetness. It is warming and boozy. Some vague bitterness. A slow sipper. It cost me $54 and while it was very good. It was way overpriced.

Cellared 6 years. Opaque brown body, no head. Smell has big molasses, dark fruit, rum, plum, brown sugar and a hint of leather, barley and oak. Taste explodes of raisin, date, molasses, brown sugar, sugar cane, and rum, with barley, toasty oak, and caramel supporting. Feel is still, boozy with a sweet edge, barley and oak keeps in check. Definitely sweetest of the series. The wife loved it

Sweet caramel malty, tobacco and leather, candied dark fruits, and prominent, oak barrel boozy nose on this one! Taste follows exactly with a still and medium-bodied mouthfeel...and a port wine vinous addition to the finish. This is aged in rum barrels, but I get more of a red wine/port influence here. This is different but a good sipper!
