this was also one of our favorites when we were in the saint-laurent location. a complex and well made quad, these guys seem to do all the belgian styles very well. this pours just a little flat from the tap, an auburn to chestnut color in the glass, not hazy really, but dense enough to not really be see through either. aroma is strongly autumnal, harvest time dried fruits, figs, raisins, cherries, and fusel alcohol, with a nice nutty toasted grain base and a neat sweetness as an alcohol spike, a dark candy sugar i would think, but maple notes are here too. the flavor is a lot like the nose, tons of dried fruit, very earthy and somewhat less sweet than many of these, but with a lot of belgian yeast character, timeless and mature and also quite fruity, with enough alcohol coming through to be cozy but not burn. layers of flavor here, the malt is awesome, sweet enough but also hearty and earthy too, very fall season to me. this lacks the carbonation i like in all belgian styles, but has a rich density that sort of makes the feel still work well without it. excellent beer, more bubbles would make it next level though! maybe my favorite one i had in here, up there with the session belgian for me!
