Extremely pale, straw color. Hazy. Near blanketing lace throughout the tasting.

There’s an interesting bacon smell—part smoky, part bacon fat. No alcohol and no sweetness.

Impressive carbonation for a Tripel. The body holds up but this is a deceptive feel for the style. Here, there’s some sweetness and a touch of alcohol. The flavor makes the beer seem fuller than it is. Easy to drink, I even detect some balancing hop bitterness.

all of the belgian styles in here were good, and while this one isnt quite as complex as some of the better old world examples of the style, its real well done, and i like it being lighter in alcohol strength for the style too, more drinkable, although i can still sort of appreciate the booze in it, which is a neat feature, lowering but still incorporating the alcohol. pale golden in color, not as cloudy as some, but very active with the carbonation and the head. fruity yeast all the way, pear and white grape and even apple, sort of autumnal but still really bright and lively too, mild bubblegum esters, and less of a grain complexion than i usually like these to have, some added sugar spike but not a ton of malt flavor happening here. the body is predictably lighter too, not thin necessarily, but pretty mild, the effervescent carbonation helps it still feel the part. less residual sugar than a lot of these have, but its not quite all the way dry, belgian fruitiness and esters to finish, drinkable for what it is, well made, clean, but a little safe too. i preferred their quad to their tripel.

Tap at the brewpub: Poured a clear yellow color ale with a nice white foamy head with good retention and some lacing. Aroma of candi sugar with light fruity notes is quiet nice. Taste is a mix of candi sugar notes with cereal and fruity ester with light spicy yeast undertones. Body is about average for style with good carbonation and some alcohol was perceptible. Well done overall if maybe for the fact that alcohol could be better integrated.

Enjoyed on tap at the brewpub. Fruity aroma, and yeasty. Golden colour with a bit of white head, that leaves fainter lacing. A sipper.Some hops, more sweeter than bitter as required for the style.Drinkable, not bad, hits the style.Average mouthfeel, which is a little bit less than expected from the style.

20 oz on-tap glass directly at Siboire brewery in Sherbrooke

A - Slightly cloudy golden color with a small white head leaving good lacing

S - Citrus, honey, alcohol, backed by a cerealic pils malt base

T - Starting with a fruity citrus taste and finish with a soft floral noble hops, a touch of peppery spiciness, maybe even a subtle coriander

MF - Smooth bitterness, medium bodied, moderate carbonation for the style, little bit dry

D - An excellent tripel, very nice and very easy to drink
