A slight diversion from German sparkle party. We took the base recipe and fermented it with a wild yeast strain that produces beautiful citrus notes and accentuated wheat characteristics.

Chub fill from the Boise pub... Picked it up last week finally getting around to enjoying it tonight... Pours a slightly hazy glowing golden... Short-lived white head... Funky lemon zest and some dusty/earth bretty notes... Light body without ever being overly acidic... Drinkability is good, but the pH will keep this at about 2 smaller glasses for me.
