among the highlights of our visit here on sunday, a gin barrel aged sour ale with peaches and chamomile, super interesting mix of flavors, memorably distinctive, but not quite as well refined as it could be, it would be epic if it were. looks like a still hazy ipa, that cloudy light orange tone in a globe, headless. the nose is awesome though. ripe peaches with the fuzzy skin and the sweet yellow flesh, tea-like and botanical with the chamomile, hints of jasmine, elderflower, and dandelion there too, maybe some green grass as well, and then the acidity, which is pretty clean and lacking funk to me, better with some developed brett to it, but all of this is unified and enhanced by the gin, which brings the chamomile up, adds a piney sharpness which is cool with the peach, and some wood softens the bacterial acidity. the flavor is all of this, peaches in front of the chamomile or the gin to me, and i definitely wish for more of a saison vibe to the base beer, its wheaty maybe and certainly grainy, but something more from the ferment would be cool here. its slightly vinous as it is, puckery without being too sharp, and bright and summery overall. its not over the top gin, but its very complex. more carbonation would serve this well too, a shame its not a little more delicate, but the flavors bang here! ambitious and delicious!
