A - Poured one finger of creamy beige head. Not too much clarity. It was a bit cloudy. No continued carbonation at all and no lacing. The color I can best describe as beer bottle brown glass color.

S - Initial smells were very nice. I found in this order. Malty, sugars, taffy, toffee, hop twigs, sweetness.... long pause.... pork, smoked ham, pig knuckles. Whaaa? There were unmistakable off flavors. Something with heavy strong protein based flavors. I was shocked at how quickly the smells went from delightful to upsetting. For the whole rest of this beer I couldn't get that boiled pig knuckle smell out of my head. I'm wondering if there wasn't some kind of O2 activation chemical reaction at play here.

T - Hmm too much lingering smell. A bit of funk, some meaty tastes, and charcoal, and what I though might have been a tootsie roll. The brewer chose an unusual hop for this one indeed. There some good yeast flavors and what might be wheat malt and lightly roasted malt. The combination of the species of yeast and the flavor of hop made for a very unique flavor. Aftertaste was mostly non-existent.

M - Bit too watery for me. Kind of common in J-micro beers. No body. And 4% alcohol just increases that feeling.

D - I'm unsure what to say. This is a very complex beer. I will give them an A for effort and a D for product. The hop yeast combo is way out there, and requires some training, like a powerful aged cheese.

*Note, after reading more about this beer style I wonder if the meat flavors weren't due to some nuts being added.
