Holy Mackerel Small Batch Beers "Holy Passakos"

Notes via stream of consciousness: A rough pour has brought up a thick thumb's width of off-white foam atop a hazy orange body. A fair amount of particulate is visible in suspension. The aroma is sweetish and bready with an unusual characteristic from the yeast that I can't quite put my finger on. Is it vanilla? It seems like it's leaning towards being a Belgian yeast but at the same time I don't believe that it is. The taste follows and it does have what almost seems like a note of vanilla to it. Maybe it is a Belgian yeast but it's definitely throttled back if it is. There's a touch of soft apple, some mild grassiness, and a hint of delicate spiciness as well. It's unusual and interesting. A moderate bitterness balances it and it finishes mainly dry with some sweetish grain and light grassiness lingering. In the mouth it's medium bodied and dextrinous, and nicely smooth across the tongue with a gentle, fine-bubbled carbonation that seems natural. This beer could certainly be more refined but there's something very charming about it as it is.
