Dec 2011

Poured into a globe at Brouwer’s Cafe for the Big Wood event, 2008 version.

Pours a murky hazel with very little carbonation or head.

Smells like honey and straw, slight caramel.

Taste was very unique, very balanced honey, earthy, wood, slightly bitter.

Palate was mild with a bit of a bitter aftertaste.

Overall, a unique experience, not sure I’ve tried anything like this before. It’s drinkable but not something I would go head over heals to try again.

4oz sample poured into a mini tulip at the tasting room.

A: Caramel brown in color with a medium haze. A half finger tight white head that stuck around considering the ABV and left a good lacing.

S: Big bold bourbon and vanilla with tart citrus notes trying to bust through. Some caramel and Belgian notes lingering in the background.

T: Bourbon and vanilla consumes the palate. The vanilla really pushes the tart/sourness back and actually works well with it. Light oak, caramel, and clove. Alcohol and more vanilla in the finish.

M: Medium body with a good amount of carbonation. Slightly sticky. Definitely an alcohol sting that coats the tongue and throat.

O: A very good beer. I would of liked the tartness to pop a little more and the bourbon to be a little more subdued. Don't know how much Alan has of this but it can only get better for years to come like most his beers.

Poured from tap into a tulip. Pours a hazy orange color with a nice head.

The bourbon barrel does dominate with some tones of oranges and citrus tones.

Fuller feel, but doesn't really show much tartness as the bourbon influence kinda kills that. There are notes of bourbon and oranges mostly.

A good beer that was a probably a good idea. The bourbon influence is pretty dominate and seems to hide the sour qualities.

This beer poured out as a bright golden yellow color with a thin white head on top. Not much lacing here or retention. The smell is very tart, it gives off lots of oak aromas with the bacteria screaming loudly here. The taste of the beer is completely different from the Fred from the Wood I had a while ago. It's very tart, lots of citric acid like flavors in this one. The malt is kind of hidden and there isn't much in the way of anything but the sourness. The mouthfeel is thin, decently carbonated and dry. Overall I expected this to be a lot more like the Fred from the Wood I had a long time ago but it was much thinner and all the heavy boozy sweetness was completely gone. A bit of a disappointment in my opinion here. I didn't think that the addition of Brett and other bacteria's would completely alter a beer like it did to this one.
