This special house recipe is a strong golden Trappist style Tripel with hints of coriander and honey in the finish.

At the brewpub.
Hazy golden color with a thick thin head with decent retention.
Sweet predominant aroma with notes of pineapple sweetened juice.
Sweet flavor with notes of lots of candy sugar, pineapple sweetened juice, cloves, crystallized fruits, ripped green apple and herbs. Medium dry aftertaste with a mild bitterness.
Medium to full body with appropriate carbonation. Stick feeling. Alcohol of 9% is simply not there, different from style, likely an attenuation issue.
I found this Tripel way too sweet, candi sugar was clearly overdone, shadowing any complexity. I think it was not fully attenuated given this felt very far from 9% abv. Also, hops were low even compared to traditional Belgian counterparts.

quite a bit less sweet than other tripels out there, and that made this interesting to me. i taste all the grain more cleanly without all the sugar in the finish, and the beer never loses its regal richness, i was a big fan of this. the yeast here is a lot more vibrant and forward than it is in their other belgian styles they make, as in the beer is less balanced, leaning much more on the yeast to flavor this one, and it is a cool strain, rightly used here. lots of fruit in the nose, green apple and white wine for the most part, a generic floral orchard element too, and a bit more spice and dried fruits in the flavor, white pepper, tea, and sweet citrus, even banana in the finish. it lingers quite awhile on the tongue, even with all the carbonation, and really is very hearty and satisfying, quite distinguishable from the crowd, and more authentic and genuine tasting to me than a whole lot of other american made takes on the style. one of my favorites we had in here, but all of the belgian stuff was excellent!
