This is Rudy Borrego’s recipe emulating a Belgian Tripel. Golden in color, 8.3% in alcohol with a slightly estery, fruity yeast-derived character. So you’ve conquered all the double black diamonds at the ski resort? Time for an appointment with a Tripel Black Diamond!

Enjoyed at River Fest in Casper yesterday.

A hazy light golden colour, with a nice head of foam and good lacing.

The smell had some spicy notes, coriander and light clove, some fruitiness, earthy malt and light aroma of hops.

The taste matched the smell very well. Earthy, lightly spicy with the coriander not so much with clove, a bit of a hoppy kick...overall, very smooth and easy to drink. I felt some of the alcohol after a few sips but not enough to detract.

I liked this a lot. I'd love to see it on rotation in town.

a: served in a tall stemmed glass, the beer is a medium golden-amber in color, nice coating of white carbonation

s: sweet pilsen malts on the nose, peppery yeast, nicely spicy, fruity esters - maybe grape, apple, or stone fruit - but tough to nail down, clean malt sugar, grassy noble hops, smells nice

m: carbonation on the lively side, medium-high, and the body around medium with a slight sugary heft, though drying well

t: sweet pilsen malt flavor with some light sugars, moderate yeast contribution - mostly a peppery flavor, sweet pale fruits, cleans up nicely with a grassy noble hop finish

o: a little unique and perhaps not exactly traditional, but a better tripel than countless numbers of the American versions I've sampled over the years, liked this one
