its crazy that this was brewed in may of 2016, it still seems pretty fresh to me somehow, i know the brett helps with the usual oxidation and fade, but like, i can straight up still pick out mosaic hops in here, both in aroma and flavor, pretty rad! the brett, at this point anyway, is really well developed. its funky and farmy, wet animal and musty basement type, a brux-esque acidity there too, mouthwatering, super dry. its crazy that this has a little bit of a brassy even bronze color to it, but there is very little grain flavor in it, whats here is largely faded i think, some body remains but the flavor really doesnt, dry and simple on the malt side. the hops are green and citrusy, nice with the bit of pucker that has emerged, i get trace orange and passion fruit too, with some amount of green bitterness at the end, remarkable for being three years old now! the brett defines this one, and really makes it for me, the beer is so well cleaned up, dry and clear and no sediment even in the bottom of the bottle, its funky without being invasive, and its somehow preserved the hops really well. i always seem to get trois dames beers when they are years old, its a shame, but this one is still drinking delicious! great carbonation too, almost refreshing for what it is!
