someday, somehow, somewhere, i am going to have a beer from these guys that isnt ancient, marked down, dusty and past its prime. not sure when, but i swear it will happen. this one is old, bottled in 2018, done with wild yeasts from multiple sources, and holding up pretty well, despite some obvious oxidation and fade, a shame, but thats what you get with this brewery in the states most of the time unfortunately. its clearer than expected, not real heady, and shiny as they get, golden and sunny. the nose is white wine all the way, more bacterial tang than bretty funk, but both present, fully wild, a little lambic thing, stone fruit all the way, off dry, herbal, weird but cool some vinegar, my mouth waters. the flavor hits on all of this, white wine through and through, sourer than i want it to be, but its good sour, apple cider vinegar and minerals. i almost get a tomatillo tang to this, herbal and green, weird as that is, and some wet paper too, this has some miles on it. its crazy to see their stuff getting treated like this in the states, its always on a warm shelf, always marked down, years old, makes no sense. they are one of the best in the world, but its hard to appreciate when the stuff we get here is always in this state, not their fault i know, but its a shame nevertheless. this one was cool, especially for two bucks a bottle, but the process of capturing yeasts from all over the map doesnt quite get its due here, makes me sad...
