this is amazing stuff, near perfect, brett devo on the label, i think somewhat different from the old saints devotion, which was bottle conditioned with brett, this seems like a mostly or entirely brett fermentation, not just a refermentation, and overall, this might be one of my favorite wild ales out there right now, absolutely stunning in quality and drinkability. the bottle basically explodes when its opened, gushing a bit and pushing some bubbles up and out. beautiful in the glass though, with an airy white head resting on top of a pale straw wheaty looking base, hazy but not thick, still delicate and highly active, exactly what i want a saison or a belgian pale to look like. the aroma and flavor are really balanced, like all the lost abbey suff. here the balance is brett and hops. its a great strain or couple of strains, maybe brett drie, really fruity, white grapey, and also sort of earthy, stray and hay and bread all come to mind as well, bone dry, and funky but super clean and mature. its incredible really. the hops are old worldy, grassy and bitter, subtle lime and lemon, a little oil, green tea, fresh wood. the malts are great, simple and pale, but with some structure here too, likely wheat in the mix. an absolute eruption of carbonation follows every sip, and then the beer vanishes from the palate on the swallow. refreshing and clean, especially for what it is, i am blown away by the quality here, this is perfectly polished. a great expression of brett beer, wild beer, bpa, whatever, its as good as the style really gets for me. no need for fruit or barrels here. some of the very best beer these guys make!
