Appears a transparent amber with a small, off white head that quickly fades into a mild cap. Scattered bits of lacing are left around the glass.
Smell is of brown sugar, caramel, Belgian yeast (chouffe) esters, citrusy, with ripe fruit.
Taste is of the aromas but a little toned down. Mild notes of ripe fruit, raisins, a touch of apricots and bananas.
Mouthfeel is medium bodied, semi-sweet, with decent carbonation.

On tap at Belgian Comes to West Chester (Iron Hill).
Poured a medium amber color with a small sized off whtie head. Aromas of roast, earthy, burnt candi sugar, and caramel. Tastes of candi sugar, some dark fruitiness, and citrus.
A nice and different spin on the dubbel style.

Served on tap at the brewpub on 12/6/08. Served in a pint glass, which I thought a little odd for the style.
Pours a clear, coppery amber with a finger of creamy brite-white head. Bunches up around the edges with some thin wisps in the middle, leaving some decent looking lacing back. The aroma smells of sugar cookies, citrus, peppery spices, and clove.
The taste is a mix of silky candied sugars, citric character, some darker fruits like cherries or raisins, spice, a bit of smoke in the back, and some hops that firm up the finish. The mouthfeel is fuller bodied with a fairly nice snap to the carbonation. The ABV is very well hidden in this, with the only sense of it coming from the heft in the body.
Very solid Dubbel here that I think will only grow and get better with future brewings. This was a nice change up from their other offerings and I look forward to trying it again.

A: Light golden brown without red tones. A single fingers breadth of off white head tops the glass. Fades a bit quick for style and does not lace well. Not quite well carbonated enough for style either.
S: Banana, clove, golden raisin, melanoidins, some sherry/vinous notes. The elements are here but the aroma is relatively weak and not robust enough to gain a higher rating. This will only improve with further brewings or perhaps more carbonation to bring out the bouquet to the nose.
T: A wonderful spicy golden raisin flavor. Nice and malty. Little hops notes. Perhaps a tad heavy on the sherry like flavors. On the sweet side. Yeast adds a fruity quality to finish.
M/D: Thin even for style. Head retention and carbonation are not what one expects for the dubbel but quite quaffable. I thought this was the best of the three beers I sampled and seemed the most refined. A small point to note is that this beer was served to me in a pint glass. I would have preferred a tulip. And finally at $3.75 it is a steal.

Deep honey semi translucent color w/ full sloppy soapy head. Nose weak but detectable phenolics and candied raisin, and cranberry. Taste of dried apricot, citrus, spice and mild but noticeable phenolics. Tart raisin and cranberry. Significantly candied. Mouthfeel is tart and prickly with a full finish. Drinkability is average but overall impressive.
