Our 2018 installment of the Wild Christmas series was aged in oak barrels for 12 months with our house sour culture before being racked onto 1,000 pounds of Balaton cherries and allowed to re-ferment for eight weeks. Aromas of pie cherries, leather, clover honey, and almonds are followed by mulling spices, and a touch of orange peel.

Deep reddish-brown body; starts off with a very thick, sudsy head that quickly dissipates to a thin, wispy ring around the glass. Red wine and cherry aroma. Intense sour cherry flavor; cherry cola; some brett quality to the taste. Medium body; tart and acidic; seems a bit water.

Definitely a wild and cherry-like beer, definitely intense initially with the flavor but balancing out a great deal after the beer sets for a while. The "rest" seems to bring out a smoother, woodier quality to the beer as it opens up.

L:. Pours a dark purple with no head and no lacing on the glass.

S:. Starts with a nose of wintery spice, followed by a sweet and sour and a bit of vanilla.

T: Starts with sweet and slightly tart cherry, some vanilla and tartness. Don't get the winter spices from the nose.

F:. Medium body, coats the mouth.

O:. Very nice cherry flavor in this sour.

Canned October 16th, bought at Urban Bottle.

It pours a not quite clear brownish red with a small head of foam that is more brown than red. It disappears quickly leaving little lacing behind.

Smells of tart to sour cherries, almost vinous, hints of Brett. Wee bit of cherry vinegar, if there was such a thing. Woody from the oak barrel.

Tart cherries, woody from the oak, tannin like flavours, hints of some funk.
Tart and very dry finish.

High end of medium bodied, robust carbonation.

Pretty damn good Wild!
