Goyck is a blend of two beers, a top fermented beer 'Toots' and a beer of spontaneous fermentation 'Lindemans Lambic'. The bottle refermentation with Brettanomyces gives the final beer a unique taste and aroma.

This was a Christmas gift in 2023 that was drunk in May 2024.
L: In the glass, the beer is a hazy, peachy-orange colour, with a fluffy but thin white head and quite a lot of thick-bubbled carbonation moving steadily up the glass.
S: The aroma is a burst of freshness, reminiscent of spritzy orange peel and the invigorating scent of freshly-picked leaves from the tree. There's a hint of woody funkiness that adds a layer of complexity.
T: The taste is refreshingly tart and orangey but restrained and sherbet-like, meaning there's no mouth-puckering, jowl-shaking reaction upon swallowing. The tartness encourages an immediate follow-up sip.
M: Mouthfeel is full and smooth, and carbonation is minimal. That sherbet quality I mentioned above is evident in the mouthfeel.
O: This is a well-blended, refreshing beer. I have a 750ml bottle in front of me, and I imagine I will enjoy every bit of it.

A 750ml bottle, bottled on April 2018, with a best before date of April 2025. Poured into a 3 Fonteinen stemmed glass.
Appearance: A lightly hazy golden straw yellow colour with a big three finger white head that dissipated fairly quickly but eventually settled to a very nice fluffy thin replenishing layer while leaving good lacing.
Aroma: Brett, damp wood, zingy, citrus rind, lemon peel, apricot, peach, straw, with floral notes.
Taste: Funky, brett, musty, apricot, peach, citrusy, lemon zest, grass, with a herbal and floral finish.
Mouthfeel: Creamy, medium bodied with moderate to soft carbonation.
Overall: An enjoyable blend of beers that is refreshing and great for a hot summer day.

Paired well with a lunch of charcuterie and cheese on a misty, rainy afternoon. The balanced acidity cut the richness of the fatty foods well. Light and effervescent, lemony and lightly oaky. This is a nice blend. Though it contains lambic, it's not strictly a lambic in the traditional sense.
In the wise words of the late Michael Jackson, it's eminently drinkable. Thanks to Aaron for the assist!
